Which restaurants in North Jersey define New Jersey dining, according to Open Table?
Best to begin by defining what that even means.
According to Open Table, the online restaurant-reservation company, restaurants that define an area's dining are restaurants that are "so closely woven into the fabric of a city they become part of its heartbeat, making it almost impossible to imagine the place without them." Open Table has another term for them: The Greats.

It named 22 restaurants in the Garden State that define dining here, dividing them into regions: North, Central and South Jersey. (Guess we know what side Open Table is on in that age-old debate on whether Central Jersey exists.)
And regarding dining in NJ, the company had this to say: "Often overshadowed by the cities that bookend it — New York City and Philadelphia — the state’s dining scene flies under the radar, but those who pay attention are richly rewarded."
